Ingredients
CHICKEN:
500 g chicken tenderloins
Oil spray
BREADCRUMB:
1 ½ cups panko breadcrumbs
Oil spray
BATTER:
1 egg
1 tbsp mayonnaise
1 ½ tbsp dijon mustard
2 tbsp flour
½ tsp salt
Black pepper
How to Prepare
Step 1:
Preheat the oven to 390 degrees Fahrenheit. Then spread the panko breadcrumbs on a baking spray, then spray with oil. Allow to bake for about 3-5 minutes until it is light golden, then transfer to a bowl.
Step 2:
On a baking tray, place a rack , and place the batter ingredients in a bowl. Use a fork to whisk together until it is well combined. Then add the chicken into the whisked batter ingredients and toss to coat.
Step 3:
Use tongs to pick out the chicken and put it into the panko bowl. Sprinkle the surface of the chicken with breadcrumbs and press down to coat and penetrate. Take the chicken and place on the baking tray. If you have more chicken left, you can do this for the rest of the chicken.
Step 4:
Spray with little oil, sprinkle a pinch of salt, optional. Then allow the chicken to bake for 15 minutes on medium or up to 20 minutes if gigantic.
Step 5:
Remove the chicken from the oven and serve immediately. You can serve with any sauce of your choice and sprinkled with fresh parsley, if desired.
Tips and variations
To use honey mustard sauce with your chicken, you make your honey mustard sauce by mixing together ⅓ cup of mayonnaise, 2 tbsp dijon mustard, 2 tbsp honey, 1-2 lemon juice, salt and pepper.
If you want to make the recipe ahead, you can toast the breadcrumbs, and put the chicken in the batter for up to 2 days. Then crumb the chicken before baking. You can store it in the freezer for preservation.
If you want to reheat the chicken, you can blast it in the oven for 3-5 minutes at 390 degree Fahrenheit until it is warmed enough to eat.
